It's a rather simple story, but an impressive one. He was quite famished one night, you see, and went out looking for a meal, coming upon a bear.

He had never had the chance to have a meal so big, so he threw caution to the wind and leapt upon the beastie. The fight was ferocious but short, and what little blood the bear had spilled from him Astarion drank twofold from the bear.

But, yes, it's about the life essence from the blood moreso the blood itself. However, the more sentient the being the better, so humanoids are more, shall we say, satiating.

Aabsolutely. Take the bear versus a human: while deliciously fulfilling, the bear is still akin to drinking a rank beer and the human a perfectly aged red.

What one consumes or imbibes can change the taste, as can any magical afflictions one may be under. Simple bias for the person may affect it as well.
