Oh man, I gotta get me one at some point...
But yeah! Basically it's one to go and one to stop, and the trick is to ease onto the accelerator rather than pushing hard.
Usually they have mirrors for you to help you keep an eye on things, although in this time maybe it has other methods like cameras.

There were a lot of screens but all I managed was to get them to light up and play music.
I think I played a movie for a little while, too.
